Hi Kiwi, thank you so much for your time. What is your role at ROBINSON?
I develop culinary concepts and drive innovation for all the clubs. As a long-time partner, I support ROBINSON with my expertise and ideas. That means I create new dishes, assist with restaurant openings and provide training and fresh ideas. All of this is done to make dining an experience for our guests. Ultimately, I’m kind of like a creative ‘jack of all trades’.

What does the slogan ‘Share the moment’ mean to you personally?
In our daily work, my colleagues and I strive to make the whole experience just a little bit more appealing for our guests. We want to delight our guests with surprises and offer them an experience they haven’t had anywhere else. To that end, we remain ‘hungry’ and stay in tune with the spirit of the times.
How does the range of culinary offers at ROBINSON Clubs differ from those at other hotels?
I’ve been lucky enough to collect quite a few impressions over the course of my career and, I have to say, ROBINSON sets the bar very high. Unlike at other hotels, guests enjoy a more modern and innovative dining experience here. We identify trends and needs and respond to them quickly.
What role does food play in your happiness?
I can confirm that food plays an essential role in happiness. At ROBINSON, that’s exactly what I do: make guests happy through culinary experiences. Merely satisfying guests is not enough for us. Our contribution rounds out the overall experience for guests and makes their holidays truly complete.
Sports also play a major role at ROBINSON Clubs. Where does this tie in with cuisine?
Our culinary creations are meticulously tailored to the ROBINSON sports and wellness programme. Many of our guests are active people who love sports. This means that they often take a conscious approach to their diet and have a pretty clear idea of what they want on their plate – and what they’d rather avoid.
At ROBINSON, you talk about culinary experiences. Can you tell us how these are created?
As already mentioned, we constantly ask ourselves what our guests want and need, what the current trends are and what trends are on the horizon. We adapt these ideas and develop concepts based on them. Then we implement the idea in a pilot club and later roll it out to other clubs.
Your job requires a lot of creativity. Where do you get the inspiration to keep coming up with new culinary experiences?
I’m rarely at home and am practically always out and about working on culinary projects and things to do with food. It’s inevitable that I pick up new impressions everywhere I go. I also find inspiration from my network and read a lot. When the moment is right, I try out new creations freely without relying on recipes or cookbooks.
You mentioned that dining at ROBINSON is an experience. How important is this aspect?
Extremely important! The role of the setting in which you eat couldn’t be more important. That’s why ROBINSON offers speciality restaurants, event days and other highlights that take dining to a whole new level. Only ROBINSON can really do that.

The unconventional! There’s an incredible number of things taking place on a culinary level, and the head chef stops by in person. You can experience this in a different way at every club.

You’ve touched on a new awareness of nutrition and physical well-being. To what extent does BalAyur address this issue?
We basically provide the culinary aspect to go along with massages, beauty treatments and the like. We noticed early on that guests increasingly asked for vegetarian or vegan dishes, so we thought about how we could incorporate this into the buffet as a separate station. Now guests can use QR codes and their smartphones to take a self-assessment test to determine their dosha type and then put together their own selection of dishes and spices.
That’s pretty amazing. Do you have any other examples of surprise moments?
Again, I don’t want to give too much away, but for us, it’s part of our daily routine to take guests on a sunrise hike, for example. Or that a team of coaches regularly cooks for their training group. Of course, that means all our colleagues across departments have to work together as a team, but that’s exactly what we all really look forward to.
Can you identify a very personal moment of happiness from your career?
No, there are simply too many. But what makes me happiest is when we put a new idea into action for the first time and I get to see the guests’ reactions right then and there. The feeling is truly indescribable, and it gives me goosebumps every time – a sensation I hope to feel for at least another ten years. As a ‘regular’ cook, you just don’t get to experience something like that. SHARE THE MOMENT!
Finally, we’d love to know what makes a meal really good for you.
It’s actually quite simple. I want to know where my ingredients come from. The quality has to be right, and the ingredients have to be used wisely. By the way, if I get to visit a local farmer with a guest, that’s another moment of happiness.
